Can anyone tell me how to make cd rips of games, eg how to downsample, etc

Each game is different.

Get a hard drive and forget about it.

As Opjose said, each game is different. You have to look at the game figure out what media it uses and downsample and remove what you can live without yourself. It may or may not work. You just gotta try and see.

CD rips are extremely hard to make with quality games since most of the time they take more than 1 or 2gb...

Its quite easy to make a rip though. Just remove any demo files, usually big .bik movies.
If the sounds are wav you can downsample them with any good sound software (soundforge).
BIK videos are easy to downsample as well using radtools.
