How big disk can I install? 5400Rpm or is it ok with 7200Rpm?
Any advice on what to buy?

No. It doesn't really matter.

Again, it doesn't matter. The sky is the limit. There used to be a problem with the HDD size but as long as you're using a recent BIOS (i.e. Xecutor 4980) it doesn't matter. The RPMs don't matter either. Some people bring up the "overheating" factor but I've put 7200's in at least a dozen Xboxes and never had an overheat problem yet.

I've modded a bunch of Xbox's and I find that the Seagate HDD's run the coolest. I use the 7200 RPM 8 Meg Cache models for XBox I build.
As far as space, with the new LBA hack I think the limit is a what multiple terabytes now? Basicly however large of an HDD you can buy will work.
