I have an xbox 360 with the HDMI output; however, my surround sound uses optical audio.

Awhile ago, there was a mod that required you to remove the casing of the component cable so both the compenent (optical) and HDMI calbes could be used. It worked for awhile but it always had problem starting up ie: RRoD 75% of the time, 25% of the time boots up and also restarted each time the TV was turn off/on (no fix to this I know of).

Now though, it seems like the 360 is on permanent RRoD and I haven't even played more than 50 hours. Help? If necessary, I guess I can just x clamp the 360.

Your 360 is broke, the component cable mod had nothing to do with it. Your xbox resets when the TV is turned off because using the component cable and HDMI cable at the same time causes issues with HDMI handshaking. You really need the official audio dongle if you want to avoid this problem, or get an AV receiver that supports HDMI audio.
