Ive been out of the loop for a long while but from what I can tell from reading the 360 has been hacked (not just the dvd hack, I see talk about writing to nand and such). How far has the hacking gone? Can we install replacement dashboards and launch games straight from the HD yet like with the original xbox? Unsigned code?

Yes you can do those things IF you can find a 360 manufactured before June 18th 2009 AND still has the older pre summer dashboard update. Meaning that any console that has been on Live since last summer AND has not played ANY game that has come out over the past 7 months then it can be "jtaged" and have ether XBR or Freeboot flashed to the nand to run homebrew apps.

Hmm, is the homebrew scene big enough to be worth the trouble?

Sure it is for most of us lucky enough to be able to find consoles that can still be jtaged.
