I don't know if USB hubs would work with Xbox Media Center, but I do know that they work with Linux. The only thing I tested with XBMC was such an USB->PS/2 adapter. I think I also used it once with DOSXbox.
So far I never had problems with my USB hub, I use it to connect a USB mouse, USB keyboard and a USB headset (works fine with the Linux version of Skype under Gentoox) and I also can use both, the mouse and keyboard for example in XBMC and ScummVMx the same time.
@nes6502: You really didn't know yet, that you can use USB 1.1 hardware with a simple adapter?

Emulators like WinUAEX or ScummVMx have USB hardware support now for quite a while and since XBMC 2.0 you can also connect a USB stick with it and play music files from it or transfer files to your Xbox HDD from it in the XBMC file manager. The controller ports are actually just USB 1.1 ports, they only have a different design.
I also think that a USB mouse support would be interesting for games like Mario Paint, if it is not be too much work.
By the way, are there any other interesting titles you could play with a SNES mouse? I never did buy Mario Paint back then so I really never cared much about that, I only think I read something about the SNES port of Civilizations supporting it.
