Lost Planet 2 Local Multiplayer Question Options

I have been trying to play this game offline co-op with my girlfriend, and I refuse to play the game on easy mode.

We get to the point where you're at the mine and have to take it down. After being killed a bunch of times here and having to continue we're taken back to the point where you're on a raft and starting at the first real level after the intro level in the snow where you first hit the jungle.

I was just wondering why it doesn't save where you really left off. And does this have anything to do with the fact that I'm playing it on a Jtag'd console, or is it just the way the game is? And if this is just how it is, when do you get to the next real save point? The whole time it says that it's saving after missions, but apparently that's just for the respawns until you run out of those.
