Can you simply switch to stock xbox hdds by unplugging the cable from one and into the other? Without doing anything else?

The hard drives are locked
they are briefly unlocked when the xbox turns on
To unlock them
there are many things you can do
like temporarily softmod your xbox and extract the eeprom which holds the locking code
then use xboxhdm to unlock the drive
after that, get your new drive and lock it usin xboxhdm
