If I unsolder the trigger switches (they're called Potentiometers I think? Not sure) from the controller circuit board, will that tell the xbox that the trigger is fully open (not pressed) or fully pressed? Not exactly sure how that works. Either way I can make it work, if I need to I can solder the points together.

No, if you get rid of them, the xbox won't do anything. Are you trying to make it so they are always pressed down? Well figure out what the resistance is when the trigger is pushed all the way using a multimeter, and then solder that resistor where the pot would have gone. Something might have to be grounded too, not too sure about that though.
