Can someone tell me if the new update upscales DVDs to 720p and 1080i with the component cables. I believe it was spoken of a while back but I have not seen any information to confirm it.

The 360 will not EVER upscale DVDs via component. The VGA connection is the only analog loophole MS has for upscaling DVD and even that is unlikely equal to the quality obtained with a good upscaling DVD player using a digital output. MS has no resolution constraints for games or non-DVD video over component cables however.
