Okay, I have a 65" projection HDTV, it says on the back that it was constructed in June of 2003, luckily it supports 480i/p, 720p and 1080i.

Q - Should those resolutions give me any problems with downscaling or anything?

This is my home theater system. (I have an Onkyo DVD player, so I just bought the component system)

Q - Can I plug the Optical output from the PS3 into this receiver and here the game/movie in 5.1?

Since your amp has HDMI switching you shouldn't need fiberoptic, the HDMI carries audio and video. Either fiber or HDMI wil give you digital surround though.
