I can just get my retail games and use evox ftp to trasnfer all the files into a folder on my pc where I can use one of the many xbox iso software out there to make an iso out of the files right and burn it into a dvd-r and should work? thats the gerneral idea? or do I have to get all fancy and use dvd2xbox etc etc and do pacthes and what not? my thoughts where that pacthes where just if you wanted to run the games of the hd which I do not I just want to make a backup into a dvdr

You need to patch games or update your bios to play either off the hard drive or a DVDR. I suggest upgrading your BIOS but if you do not want to do that you can patch most games with Craxtion or ADR patcher.
