I finally got XBMC set up the way I want it. It plays everything fine and had to adjust subs to get it to display right. But now, I have .ogm files with both dual audiostreams and some of them have subtitles, How would I get XBMC to display these subtitles. I tried it in XBMP and the subs streams were working properly, but just not in XBMC, it won't even detect them.

Unfortunatley, Subtitles in OGM files don't work yet. And as far as I can tell, NO subtitles work unless they're seperate from the movie file. This includes OGM, Matroska, VOB, etc.
Somebody correct me if I'm wrong, I haven't been able to get any of them to work tho and know for sure that they aren't yet supported in OGM.
