Anyone know of any flight sims currently released or planning to be released?
I've checked all the usual locations to no avail.

None that I know of for xbox. Try Crimson Skies. Not a flight sim, but the best flying game out there right now.

There haven't been any released in the US or (to my knowledge at least) Europe. Japan, however, has Flight Academy by Aqua System (the same people who created Petit Copter, for what it's worth). You can get it as an import from play-asia.com, or your favorite importer.

I should warn you though, I got it, and found it unplayable since it's thick with menus, and they're 100% japanese...
