I don't know what I am doing wrong, I have followed several tutorials but non have worked. I have manually set the IP address on the NIC for the XBOX to 192.168.0.1 with a subnet of 255.255.255.0 and when I try to connect to the xbox I get nothing. My XBOX IP addy is 192.168.100.10. What am I doing wrong? I have an onboard NIC and then a second NIC for the XBOX installed.

try this:

put ur computers ip to 192.168.0.2
subnet 255.255.255.0
default gateway 192.168.0.1

then put ur xbox ip to 192.168.0.3
default 192.168.0.1

Those two addresses are in the same subnet that you specified.

Try setting the NICs IP to 192.168.100.1

You should use FlashFXP. It's the only FTP client that works reliably with EvoX.
