I was wondering if I just burn some music or video to a Dvd then will it still read if I put it in the xbox. Or do I have to burn it after converting it to xiso format.
I heard if you have one of the updated Bioses then You can skip the xiso steps

You would have to either burn them in GDF (what you are calling XISO) or UDF format.
The bios has nothing to do with the formats the XBOX supports.
There have been lots of discussions about performance of GDF over UDF. Personally I burn anything non-XBOX game in UDF (i.e. bios discs, my evox disc, MAME discs, emulators, ROMs, etc.) but I burn my XBOX game backups in GDF format.
