Is There a way to get MXM to Take screen shots when a game/app is running?
I know one of the genesis emulators can do it, but can MXM do it?

MXM can take screenshots of MXM.
The only way currently to get screenshots of a GAME or APP that doesn't already have support built into it is to use a Debug BIOS with the XDK, or use a video capture card.

correct.. you also need the XDK
I dont have the first clue how to make my xbox into an XDK LOL
