like get a headset with a mic, and mod it
so it will work on xbox?

Just use any phone headset
but where exactly does that plug into the xbox controller...
if u have xbox live, then the headset plugs into the communicator.
if u dont have xbox live, then u cannot plug a headset in any where

option 3: buy a adaper on the forum, and buy a cell phone headset

No , cause theres no hardware for the Mic. Thats why when you buy the LIVE Kit it comes with a a Little Adapter that plugs in like a memory card , The Comunicator has input for the Mic , it has Volume control and a little button to mute your voice if youre going to talk some private things that you dont want other gamers to ear.
