That HEx Edit business is long! there is a far better way, or maybe not but anyway u need to Find out what your original profile name is on Xbox it will also have a ID number as the folder you can find this also with xbox-saves memory manager program what ever profile you haved taken u can change the name as long as you have the ID for that name then replace it.

For example, if u downloaded the JAY "FNG" profile off the web like what i did the first day i got PGR2, I also made a profile on my xbox in that profile folder in UDATA 435000b (from memory) in there is another folder with a funny number and letters. That is a unique ID for your profile name copy that to the JAY "FNG" folder that has the same funny ID and then thats your profile. Thats when u put it back to the Xbox that is, but then maybe the HEx Edit version is quicker I have never tried and found this way out by myself.
