Would it be possible to copy the contents of an XBOX disk over to my PC via FTP and then just copy them back to F:\Games and play them backed up that way? Would I have to edit any file in order to get them to show up on the dash menu as games on my HDD?

Easily done. Like you said just FTP it over to your PC and then to the x-box (probably your buddies). Just make sure it's in the same directory as the other x-box games.
