I've downloaded the lastest bios
(Xecuter2_4976.02_MultiVer_256k.bin) but I have seen allot of older bios that have ejectfix in the file name. Can some please explain this to me?

Normally when you hit eject the xbox will reboot. With Eject fix, it tells it now to reboot.

the x2 bios have ejectfix too, but its different. only programs that want ejectfix get it, if they arent designed to use it then eject resets the box

Do newer bios like the newest x2 bios have the eject fix?

What's it called when you press one button and it disables the chip and when you press another it enables it ? Any more information on that feature would be appreciated.

Its called "impossible". Once the modchip is off, the original BIOS is activated. There isn't a way to switch back to a modified BIOS when the Xbox is on.
