Don't need a new or different eeprom for the big hdd. Since you have a chip you don't have to lock your hdd if you don't want to. So you probably don't need the eeprom in the big hdd. But it's all a matter of personal preference. Just as long as you use the stock hdd for live, you're safe.

I don't know about that? All I know is you have to fully make sure that you isolate one of the hdd's. Meaning you can't have any power or any other wires on the other hdd while the other one is running (in short you can't have two hdd's on same IDE cable unless you make a fully isolated switch for the hdd's). I came across a tutorial a long tome ago about making a hdd switch but I couldn't be bothered looking for it at this time.

so, I would suggest using the xecuter3 modchip and xecuter lpc rebuild chip.
with that, you can have a switch so you can select it to boot the original bios+original dash.
xectuer is the cadillac of modchips in my opinion.
What are you on about? Any modchip will do him (as long as he can turn it OFF). If he has a stock hdd and disables the chip before he goes to live he'll be safe. Provided that he hasn't changed or added any files.
