I know how to do album art for games, but I have a few AVI movies and dont know how to get the image to show up for them instead of the default video icon.

If any one can help that would be great. Thanks.

...that doesnt help me any, and you dont have to be a dick. If you dont know how then why make a pointless post, even if its a noob question or not.

If your movie name is 'My Home Moive (2006).avi' then rename the image to 'My Home Movie (2006).tbn' - regardless of whether it's a gif or png file. The xbox should just display it.

As for your music, rname the album art to 'folder.jpg' and drop it in the folder that contains the album. The xbox should again pick up the folder image as the album art, and auto assign this image to each track.

That's how I've done it and it works fine. Hope that helps.
