I was wondering is it worthwhile? Should I just try and slow escape when stunned or use low counters. If I use low counters the mids while knock me over, the lows will be countered and the highs will miss, but I can be thrown low for massive damage. If I just slow escape I will go down faster. Which is better?

Well I would slow escape personally if you low counter you can still be hit by mid's it really all depends on the person you're playing and the character he/she is using as well.
