Well, I already have an intercooler, but I was wondeirng if it would make any more of a difference if I did the 12v mod on the stock fans, combined with the Intercooler.

the cooler the better, the 12v mod isnt the answer to a xbox that can chill drinks, but its free cooling! so i would say yes go for it,

Alright. What is the best place to draw the 12v from then?
i left the ground on the original connector and just ran a 12v to the bottom of the psu connector here
its switched so it only works when you turn on your 360
