A tetris clone. I did one in java a couple of months ago as a class project. First time c# user as well (also got some c++ background), so hopefully I'll be able to do it when I have some free time.

A Co-Worker and I started designing a game based on a little known board game... it's similar to chess. We got some basic pseudo-code down and we've glazed over some of the example applications.
It might be a while until we have something tangible though, we probably wont start actually working on it until next year. I want to finish up some other projects first...
But I'm definitely psyched to get started on XNA

I'm gonna build a game similar to Guitar Hero but using a real guitar, with a real time DSP to handle effects and stuff, and a full improvisation engine based on models of "signature" moves by great guitarists!
What do you mean "too ambitious for someone who can't code"? Pfft.

hmm, my first project will probably be some sort of a flight simulator... a basic one runway, 1 plane (to start) and later developing targets/weapons and maybe some AI
i really want a good poker/casino game. it would be cool if you could put the games on XBL so you can play other people
