Im sure this is a common occurance, but I was wondering if anyone could explain to me why it does this? I dont believe my TV is HD, but my 360 and PS3 run fine with the component cables, why wont my XBOX?

check the green cable it is what carries the color info the other red and blue just contain luminance info

or it is set to 480p and your TV can only handle 480i or NTSC component can still carry this signal there should be no problem except for that on some dashboards like Ava and XBMC the res is set to Best available maybe your TV isnt telling it what it can handle

To my knowledge, the cables work fine with my PS3 and 360.

On the dash where you can set the video modes, the 480p and other options are greyed out and unselectable.

Any solution to this? I'm having the same grey screen issues with component cables (others are fine) and I cannot set the resolutions to 480p, 720p, or 1080i in the MS Dashboard. The cable is one of the universal ones which allows for connectivity to a PS2/360/and original Xbox. The cable works fine with the other two consoles.
