Just wondering if someone can help me please with a question about a backup I have already made. If I was to take a backup of one of my games that had an old/no stealth patch at all, could I read it back into my PC & apply a new stealth patch somehow or would I have to start the whole process again?

Safest to re-rip the original disc and start again

no talk of re-ripping a backup. if you have the backup, you should have the original. use the original disk to rip the image from
