I am thinking about modding my 360 but what I'd like to know is what exactly happens when I do? I know that I can't play online which I don't anyway but I'd still like to be able to get updates for my xbox as well as shop in the market place...Can you still do stuff like that?

Even if you don't play games (either backed up or original) on Xbox Live, allowing a console with modified firmware to go online for any reason may cause you to be banned. If you accept that risk, though, yes, you can obtain any game updates or visit the Xbox Live Marketplace with a modified console.
