When I click on "Arcade" in the Aeon skin, it goes to my Xbox games folder instead of my Emulators folder.

Trying to make my Emulators folder the default source doesn't work. If I manually go to the emulators folder, when I open up my Games folder it goes to the emulators folder, or where ever I was just at.

Also, how can I add roms to the menu without opening an emulator, so I can use an icon view or whatever for my roms (and if I can just have a master list of my roms including snes & genesis & etc on the same list) just as it is for my xbox games?

I'm using the latest XBMC.

You will need to set a certain source name for the Arcade button to work.

See, you can only set one default source for each media type. "Games" and "Emulators" both count as "Programs", but there's only one default source available between the two... So when you click Arcade, the skin looks for a source with a particular name instead.

Not sure what that name needs to be with that specific skin. If it's not "Emulators", it'll likely be "Emulation". Note that you can edit the name of your emulator source separately to the name of your emulator folder.
