Is it possibe to just replace the Xbox hard drive with another one, or do you have to add another one? I don't want extra wires, etc coming out of my Xbox.

Yes it's possible to replace, infact, it is the more popular method.

The max size the xbox will recoginize is 137GB. You can find 160GB drives for under $99 with rebates but you will waste that 23GB. I spent about $90 on a 120GB but now I regret not going with the 160GB.
Like roar posted, it is the most popular method and easiest. Plus you can leave your original HD untouched. Look around the tutorials and you will find out what you need to do.
