I don't know - maybe this can help someone or someone can help me.

I was transferring saved game data from 360 to another however the ownership switched to another gamertag in the process.

I have my xbox to auto sign in to my gamertag from startup. I had recovered my gamertag to another xbox and set up a password for xbox live. This means that the first xbox will still sign in offline to my gamertag. In this I transferred game data to a memory car from my second profile. When I go to put it on the second xbox the data in now reassigned to gamertag 1 not gamertag 2.

I've tried in reverse but can get the gamertag to switch back again.

Scrub that.

I recovered my gamertag on second xbox and the gamesave is now showing up associated with the correct profile.

.....so dont know what happened there.

certain games that are locked to your profile will do that if moved around on memory units.
