So can I just download the latest update and burn it to a cd / flash drive right off the microsoft site, and then install it on my 360? im just wondering if i do this will my xbox not read discs when the update is done? Im never going to plug it in to the internet so i cant get it banned / scrambled right?

You just have the custom firmware on the drive right? Then yes just download the update and put it on a USB stick or CD and update all you want. Wont affect the DVD drive and its firmware at all.

If your console is jtaged then that is a different story all together.
